7 days of Christmas biscuits - Day 1

Snowflake Shorties




Ingredients:

250g plain flour 

125g cold unsalted butter 

60g icing sugar 

Pinch of salt 

Jam of your taste 


Method:

Pour the flour into a bowl and rub the cold butter into the flour Add the sugar and salt and rub until it starts to form a dough. Sometimes it looks like the dough is just crumbly, but it just takes time to start to stick together. Don’t give up. Just keep kneading the dough. Wrap in cling film and leave to chill for half an hour in a cool place (but not the fridge!).


Once the dough is cooled, preheat the oven to 180°C / 360°F. Give the dough a good knead and then halve it. Roll the dough out to about 1cm thick and cut out the shapes. In half of the shapes make a hole, then place them all on a baking tray. Bake for about 8-10 minutes until golden.


Leave them out on the tray to cool. Once cooled, put jam on the shapes that are whole, and then sandwich together with the shapes that have a cutout. Fill the cutout with jam. Dust with the icing sugar and enjoy!


Tip: If the dough is too crumbly, add 1-2 tbsp of egg yolk.

I like the jam to be thin rather than thick so you can fill the hole in the biscuit nicely. It will set after a few hours and become like jelly.

Bake time: 8-10 min

Portions: 16-18  when sandwiched together
