Pancakes 'My Way'

About the Recipe

Delicious pancakes that you can make ahead and will be ready to go on Pancake Day

Ingredients

  • 2 large eggs 

  • 135g plain flour 

  • 1 tbsp baking powder 

  • Pinch of salt 

  • 1 tbsp  caster sugar 

  • 130-150ml whole milk (or any milk)

  • Little bit of oil for frying 


 

For the topping 

  • Chocolate spread 

  • Hazelnut spread (or any spread you like)

  • Blueberries , blackberries , raspberries 

  • Icing sugar 

  • And whipped cream for decoration 

Preparation

Step 1

Beat the egg and add the flour. Mix in baking soda, sugar, salt and milk. It is important to add it in small parts to prevent lumps if you are mixing by hand. This will create a smooth batter.


Step 2

Preheat a frying pan with a small amount of oil. Pour the batter into a hot pan to create small pancakes approximately 15cm diagonally wide. Put a spoon of chocolate spread in the middle of the pancakes. Add different spreads of your choice.


Step 3

Put a small amount of fruit in the middle and fold the edges into a triangle. Do not flip the pancake. It is important that the pancake is semi raw still so that the edges stick together. Take out of the pan and fold the edges into a triangle. Keep doing this until the batter is used.

Step 4

To create the triangle pancakes, place them on a baking tray. You can store overnight in the fridge, or you can put them in a preheated oven at 180 degrees C (350 degrees F) for 10 minutes.


Step 5

Decorate with fresh cream and fruit or just maple syrup. Happy pancake day!
